This year marks the 19th year of the Ashevegas website, and year 4 of this newsletter. Some 32 years ago, I moved back to Asheville to start working as a reporter for my hometown daily newspaper. The Asheville Bagel Co., a home-based family business that launched late last month, has seen interest in its bagels explode in just a few short weeks. The bakers promises bagels made “the old-fashioned way,” a process that includes pre-fermentation, individual hand-rolling, a long cold-proof, then boiling in barley malt syrup before baking on bagel boards.
