Iced Lemon Loaf - by Winnie

INGREDIENTS
Cake loaf:
1 cup sugar
zest of one lemon
1/2 cup oil
2 eggs
juice of one lemon
1 1/2 cups flour
2 tsp bp
1/4 cup milk
1/3 cup yogurt
Icing:
1 cup powdered sugar
2 tbsp lemon juice (or milk)

DIRECTIONS
1. Preheat the oven to 350F.
2. In a large bowl add one cup of granulated sugar and the zest of one lemon in a bowl. Rub them together using your fingertips. This will help bring out the oils from the zest and add more flavor!
3. Add the eggs to the lemon sugar and whisk until it turns a bit fluffy and pale in color, about 2-3 min.
4. To the eggs, add oil, lemon juice, milk, and yogurt. Whisk until well combined. Whole milk and whole milk greek yogurt works the best, but any dairy or non-dairy milk/yogurt will work.
5. Lastly, add the flour and baking powder and mix gently until no large clumps of flour remain.
6. Pour the mixture into a greased and lined loaf pan and bake for 45-55 minutes or until the middle of the loaf is set (when you insert a toothpick into the center it comes out clean). Let the loaf cool completely in the pan.
7. Prepare the icing by adding a tbsp of lemon juice (or milk) to 1 cup of powdered sugar and mix that together. Then add a tiny bit of lemon juice at a time and mix until you get the desired consistency of icing. Prepare the icing right before serving (or else it will dry up).
8. After the loaf has cooled completely, top with the icing, then enjoy!
