The OTHER Laab You Didn't Know About
It is no question that laab is one of the most popular Thai dishes (unfortunately it’s more commonly known as larb, as I previously explained). It is offered at most Thai restaurants in N. America, and even made a cameo in one of the Spider Man movies!
But most people, and even many Thai people, do not know that there are 2 types of laab. The more popular one, the hot and sour salad made of ground meat, is laab isaan from the northeast. Here’s my recipe for laab isaan.
But there is a northern laab that is completely different. It’s called laab nuea or laab kua. Sure, they both use ground meat (because laab means to “mince”), but otherwise they taste nothing alike.
The heart of Northern laab is “prik laab,” a spice blend which makes it phenomenally aromatic. Gathering ingredients for the spice blend is really the only “hard” part of this dish, so I recommend getting that done in advance, but the rest is very weeknight friendly!
