White Chocolate & Peppermint Cookies

INGREDIENTS
1/2 cup butter (softened)
1/2 cup white sugar
1/4 cup brown sugar
1 large egg
1 1/4 cups flour
1/4 tsp baking soda
1 tsp peppermint extract **
1/2 cup crushed candy canes
1/2 cup white chocolate chips

DIRECTIONS
1. Cream together the softened butter and sugars together until it turns pale in color.
2. Then add in the egg and 1 tsp of the peppermint extract and mix until combined. Feel free to adjust the level of the extract depending on your liking. **I love using Amoretti extracts in my baking because they are so high quality and just a tiny bit goes a long way.**
3. Add in the flour and baking soda and mix just until there are no large clumps of flour visible.
4. Crush up some candy canes to fill about half a cup, then add that along with the chocolate chips to the batter. Mix until just combined.
5. Scoop the batter onto a lined baking tray, this recipe will make ~10 large cookies. Then bake at 350F for 8-11 min or until the middle is just set. Don’t overbake these cookies!
6. Let the cookies cool completely on the baking tray, and then enjoy :)
